How to use:
- Scatter raw pepitas over porridge, yoghurt, salads, hummus and roasted vegetables for a quick nutty bite.
- For toasted seeds, dry-pan-toast 200g over a medium heat for 3-4 minutes, shaking the pan often, until they pop and turn fragrant. Cool on a plate before storing.
- Build a weekly granola: combine 250g rolled oats, 200g pumpkin seeds, 100g chopped nuts, 4 tbsp honey and 3 tbsp olive oil, then bake at 160°C for 20-25 minutes, stirring halfway through.
- For homemade pepita butter, roast 500g at 160°C for 10-12 minutes, then blitz in a food processor for 8-10 minutes with a pinch of sea salt until smooth and glossy.
