O-Med Cider Vinegar is made from the juice of ripe Granny Smith and Golden Delicious apples grown in Lérida, Spain, and fermented slowly using the Schützenbach method - a traditional technique that converts the alcohol into acid gently, rather than rushing it. It's made by O-Med, a family-owned producer based in Ácula, Granada, working with Andalusian olives and fruit since 2010. The result is a softer, rounder acidity than a standard cider vinegar, with the aroma of freshly cut apples and a well-balanced sweetness underneath.

Its gentle acidity makes it a good all-rounder rather than a one-trick vinegar. Whisk it into a light vinaigrette, use it to make quick pickles for a Sunday lunch, or add a splash to a pork marinade before it goes in the oven or on the barbecue. It also works well swirled through gravy or a pan sauce for roast pork, and a spoonful stirred into apple-based puddings - even apple ice cream - brings out the fruit rather than fighting it.
